BREAKFAST TACOS

Breakfast tacos are a delicious way to start the day, but they can often be overloaded with fats and starch, leaving you weighed down and lethargic. Our 4Q version has got the perfect balance of protein, fat, and starch to keep energized and fueled all morning long!

INGREDIENTS: (yields one serving)

  • 1 tsp fat of choice (olive oil, avocado oil, ghee, etc.)

  • 1 egg

  • 1/4 cup egg whites (optional)

  • 1/8 tsp salt

  • handful of greens or non-starchy vegetables (optional)

  • 1 whole wheat tortilla

  • 1/4 avocado

  • 2 tbsp salsa

DIRECTIONS:

  1. Heat fat over medium low heat.

  2. In the meantime, whisk egg/egg whites with salt in a bowl.

  3. Scramble egg/egg whites over medium low heat. If using veggies, add in vegetables and incorporate into the eggs.

  4. Once eggs are done cooking, mash avocado onto the tortilla, add eggs, and spoon salsa on top. Enjoy!
