EGG-FREE CAESAR DRESSING

Traditional Caesar salad dressing can turn the healthiest salad into a hiding place for unnecessary fat and calories. This version omits the egg yolks and most of the oil, which cuts the calories by more than but leaves in all the flavor of a typical Caesar dressing. This recipe is also perfect for those with egg allergies, pregnant women, or anyone with concerns about eating raw or undercooked eggs.

While this dressing is definitely light, 4Q Method clients should still be using a light drizzle to leave room for other fats, like avocado or nuts. More than a drizzle and you’ll want to count it as your fat for the meal.

INGREDIENTS:

  • 1/4 cup lemon juice

  • 2 tbsp olive oil

  • 3 garlic cloves, minced

  • 1 tbsp anchovy paste

  • 2 tsp dijon mustard

  • salt and pepper, to taste

DIRECTIONS:

  1. In a bowl, whisk together all the ingredients.

  2. Season with salt and pepper, to taste.

  3. Serve immediately or keep in fridge for later use.
