ASIAN CUCUMBER SALAD

Cucumbers can be kind of tasteless. Not with this recipe! This Asian cucumber salad is bursting with flavor, and the best part it, it’s super simple and easy to make.

INGREDIENTS:

  • 1/2 cup low sodium soy sauce

  • 1/2 cup rice wine vinegar

  • 4 tsp mirin

  • 1/4 tsp salt

  • 6 mini cucumbers

  • sesame seeds (optional)

DIRECTIONS:

  1. Combine all ingredients except for cucumbers in a bowl.

  2. Slice cucumbers into 1/4 inch thick slices and add to the bowl.

  3. Toss cucumbers in the dressing so they are all coated.

  4. Cover bowl and place in fridge for 4 hours or overnight.

  5. To serve, place in a bowl and garnish with sesame seeds. (optional)
