MAYO-FREE EGG SALAD

This mayo-free egg salad allows you to enjoy the taste and texture of traditional egg salad but with a better fat-to-protein ratio and fat profile (hint: avocado!).

It is also extremely easy to make and has already been tested on kids and passed with flying colors, so it is sure to please even the pickiest of eaters!

INGREDIENTS: (makes 6 servings)

  • 6 whole eggs, hard boiled

  • 6 eggs whites, hard boiled

  • 1 1/2 avocado

  • 2 tbsp chopped fresh dill (optional)

  • 3/4 tsp salt, or to taste

  • black pepper, to taste

DIRECTIONS:

  1. In a bowl, chop eggs and egg whites to desired size. (Some prefer it more finely chopped, others like bigger chunks. Totally your call!)

  2. In a larger bowl, mash the avocado flesh.

  3. Add eggs, dill, salt, and pepper to mashed avocado and mix until combined.

  4. Serve or store in the fridge until ready to eat!
